Peri peri Jollof and Fish 10-15 chili peppers(add more if you like very spicy foods) 3-4 large bell peppers (650g) 1 large onion 2 bulbs garlic Fresh thyme sprigs (optional) (Grill for 30 minutes) Drizzle of oil Peri Peri Sauce: For the peri per sauce Roasted pepper, onion, garlic 1 teaspoon fresh or dried thyme 2 single chicken seasoning cubes 2 teaspoon sugar 1 teaspoon salt 1 tablespoon lemon juice 1 tablespoon oil For the fish: 1000g fish (croaker) ½ - 1 teaspoon salt About half cup of peri peri sauce Lemon slices For the rice: 1/8 cup oil Handful of onion 6oz tomato paste 1 cup Peri peri sauce 1-2 Bayleaves 1 cup chicken stock 2 cups water 3 ½ cups of rice 1 teaspoon of salt Cilantro to garnish #jollofrice #periperi
